This key workshop highlights how processing can achieve what ingredients can not. The workshop will looks at how to formulate with a limited range of ingredients. The companies which are at the forefront of smart processing have been able to deliver increased functionality and / or clean label without resorting to increased formulation complexity. The state of the art in smart processing will be demonstrated by presentation where processing is used to; control product microstructure; allow physical modification to replace chemical modification; deliver both quality and cost improvement from deep process understanding; produce novel functionalities using Pickering emulsions; build particles using super critical fluid technology; reproducibly mix sugars and biopolymers; engineer novel functionality with nano emulsion processing.
